Hoisin Chicken Wings
(Makes About 1½ Dozen Appetizers)
1½ lbs chicken drumettes (meatiest part of the wing)1/3 cup hoisin sauce 1 clove garlic, minced/pressed 2 Tbsp dry sherrry1 Tbsp lemon juiceDirections:Mix hoisin, sherry, lemon juice, and garlic. Add chicken, turning to coat. Cover and refrigerate for at least 1 hour or until next day.
Lift chicken from marinade, reserving marinade. Place on a greased grill 4 to 6 inches above a solid bed of medium coals (or under the broiler). Cook, turning occasionally and brushing with marinade until meat near bone is no longer pink when cut (about 12 minutes).
* Hoisin Chinese BBQ Sauce
Sold in a bottle in the Asian Foods Section of the supermarket. SunLuck brand is available in most parts of the country. HOWEVER, if you'd like to make your own, follow the recipe below:(Makes 1 Marinade Serving)(Sauce = Recipe Source Website aka SOAR)4 Tbsp Soy Sauce 2 Tbsp Black Bean Paste 1 Tbsp Honey or Molasses2 tsp white vinegar ⅛ tsp garlic powder ⅛ tsp pepper20 drops Chinese hot sauce 2 tsp sesame oilDirections:Mix all ingredients together. Makes a great marinade for chicken (especially chicken wings done on the grill or under the broiler), beef as well pork.
